Gluten Free Lunch Help Please 4 Years, 7 Months ago
Good Morning - I have my foster daughter arriving tomorrow for a couple of weeks holiday and her caregiver is flying here down from the North Island. Her caregiver is gluten intorerant and I would like to make her lunch and possibly dinner before she flys back home tomorrow later afternoon.
I was planning a nice soup for lunch, any ideas? What is a nice bread I could buy that she can eat? A lot of the specialtiy breads look like heavy bricks so I would appreciate some recommended ones
Any simple and quick but tasty dinner ideas? She may prefer to eat when she arrives back home as it is an early flight but I would at least like to offer it to her.
Thanks for any help

Hi Roseyone

I have just googled "Gluten Free Meal Options" and there are are a range of sites which you can visit to check out. Unfortunately I cannot help you with any personal suggestions but I am sure that you will find something on the internet.

Good luck.

How about those round rice cakes/biscuits, if she is not intolerant to those? Quite nice with ham, cheese, pineapple, pickles, tomatoes, etc.

I think it's mostly wheat products that people are intolerant to, but then again, she could be intolerant to almost anything.

Why not wait until she arrives & ask her. You could then pop in to a shop to get exactly what she likes. Soup sounds o.k. Main meal, meat & veges, & you'll be fine.

Count all your blessings. the ones that cost you no money.

Roseyone, Gluten is in all grains except corn and rice. It is used as a thickening agent in most sauces, dressings and gravies, it is also often used to coat deli meats. Grilled chicken is safe with a salad and Gluten Free dressing (try supermarket). DO NOT put any pickled products in as many are pickled in Malt Vinegar (barley). I don't know if the Basco brand is available there, they make a lovely beef stroganoff mix and an apricot chicken mix for hot meals. The codes that we have to watch here are any 1400 no's (thickening agents), and any colour agent with the 150 code (listed as caramel). Corn flour is also usually Wheat flour so must be checked and Icing Mixture has flour in it so you need to use Pure Icing Sugar. Good Luck. She may well come prepared anyway, I usually have to.

Oh it was great thankyou I went to the wee small but wonderful local organic shop and purchased some delicous herb stock cubes and made the most delicious vege soup, diced and grated onion and lots of garlic and softened of in small dash of olive oil, added two stock cubes, pumpkin, kumara, celery and a teaspoon of curry powder to give a little spice - it was very delcious and everyone (9 of us) loved it and asked for the recipe
With it I served warm buttered buns, and toasted gluten free orgnic bread from the same shop that came highly recommended and some lovely rice crackers sweetened with melon juice from same shop.
On the side we had grapes, manadarins and kiwifruit and bananas.
it really went down well.
thanks for the replies xoxoxox

Oh and I forgot to mention that the caregiver and also a friend that had come for the lunch both went to the organic shop for the first time straight after the lunch to buy the bread and rice crackers, and that one friend is leaving for a holiday in Tonga tomorrow and has two packets of them in her suitcase! I told the shop owner I need commision:
