Banana Cake 3 Years, 1 Month ago  
My daughter dropped by yesterday with a Banana Cake for me. It's so soft and moist, it's absolutely wonderful. I thought some of you might enjoy giving it a try. She said that when she buys bananas and they begin to get over-ripe and bruised looking, she throws them in the freezer and then uses them for this recipe.
For this recipe you can use one bundt pan, or two loaf sized pans.

Preheat the over to 350 degrees
butter and dust with flour the pan you're going to be using

1 cup of butter
2 cups of sugar
4 ripe bananas
4 eggs
2 teaspoons of baking soda
2 1/4 cups of all purpose flour

Susan said she puts all of these ingredience in her mixer, mixes it up, and pours it in the pan.

Bake for 50-55 minutes

After the cake has cooled, dust with powdered sugar.

I always use a recipe for Banana Cake which can be found in the Edmonds Cookbook here in New Zealand. I beleive that the key to a light moist banana cake is to mix all ingredients in a food processor.

I guess banana cake must be more popular in NZ than in the US, as I suspect most Kiwi cooks have a banana cake in thier baking repertoire. There's always been debate in my household about what flavour icing (that's frosting to you State-siders) should top a banana cake - lemon or chocolate? I favour chocolate and as I'm the baker, it's chocolate we have, and anyone who objects is very welcome to bake the next banana cake himself.

I am glad you put cup measurements in MissJilly, you see, I don't know what amount a stick of butter is.LOL

It does seem a lot of sugar though, I'd cut that back somewhat, or even substitute some Speanda instead.

I prefer cream cheese icing;

Some cream cheese mixed well, not too much though & not Lite, some icing sugar mixed in & a little lemon juice without making the mixture too runny. Measurements a guideline only, but it should be fairly stiff, so add icing sugar to thicken it up.

Thanks for the recipe Jill as I always let my nanners get over ripe and end up throwing them away...Now I'll put them in a cake.... Thanks again...

Yum great recipe! I like coffee or passionfruit icing/frosting on a banan cake myself. Although lemon or chocolate are nice too. Amazing what one can do with a recipe eh.

As an alternative here is a very delicious topping to put on your banana cake -
Crumble Topping
80g brown sugar
40g butter
1\4 cup desicated coconut (or shredded is nice)
1\4 cup rolled oats
4 Tablespoons milk.

Bring all ingredients to the boil in a small saucepan. Stir well.
10 mins before cake is fully baked, spoon the topping over and bake fo ra further 10 mins or until golden brown and a skewer inserted in the cake comes out clean.
We have made this without the coconut as well and it is still delicous. If you like it moist and soft keep a close eye on it, we also love it cooked to a crisp topping under the grill Enjoy!!
