I'm not really. But what are your favourite nuts and how do you use them. I love cashews although apparently they are not really nuts, but seeds. Cashews are great in Asian cooking. And in fruit cakes. Or just eat 'em raw.

Cashews are the only ones I eat mostly, but I do know that Walnuts are good for macular degeneration and that almonds are the healthiest of nuts.

My bed time snack is raw Almonds & Dates. Just love the combination.
My tongue gets sore if I eat many Walnuts.

I like them all. Whenever they are on sale I get the bulk nuts, shell them and then freeze them for later.

That is a good idea Jan. Never thought of freezing nuts before, and I sometimes have had them go rancid on me, in the pantry too. I heard also today, that you can freeze cream as well, if you whip it first, apparently it comes out as good as when it was put in there.
Unwhipped cream on the other hand, comes out watery and and somewhat altered in state, if it is frozen, and nor will it whip up, once it has been frozen either. I have not tested this for myself, but I have confidence in the person who gave me this tip. She is a great cook.
I love all of those nuts, but one of my favourites is coconut. I like anything which contains desicated coconut or coconut cream . Now it would be good to keep desicated coconut in the freezer wouldn't it? It goes off quite quickly I find, in Auckland anyway. I think it is the humidity over summer in particular.

If freezing whipped cream (which does have excellent results) I suggest piping or placing spoonsful onto a tray and freezing small amounts., then bagging or storing in a plastic box. If living alone or just a small family it is easy then to take one or two dollops from a container full of frozen portions.

Good tip Faye.
I freeze slices of Rum Sponge which is mostly cream & it works a treat.
Frozen Gateau is the in thing.
I also freeze skimmed liquid cream till I have enough to make butter.

Just coming back to this to say what a couple of great tips there were in this thread.
Thanks to Janann, I no longer have to throw out expensive nuts which too long in the pantry have gone sour on me.
The frozen whipped cream one, which I knew myself is a good one, especially for people like me who live alone, but the really good part was the addition to my tip , which was made by Faye, about freezing it in serving sized dollops which have been put through a forcer first.
Thanks for that Faye, it is a brilliant idea which works really well for me.
The other night I wanted to make my mashed potato at bit special and so I threw in a couple of those and neat them in.
Last night I indulged myself with a little apple crumble made in a small ramekin, and one of those frozen dollops from the bag in the freezer, just made it complete .!
