Canned Fruit & Chilli Chutney. 2 Years, 3 Months ago  
Something nice to share with those of you who like something tasty to have with their cheese and crackers, or with their cold meat or chicken. So easy to make, and with Christmas coming up fast, an idea perhaps for some nice little give-away gifts.
I noticed canned peaches on special at Pak 'n Save this week, so made some using them, but recipe is also delicious using using canned mango which is what I tasted first. Also recommended that canned apricots is pretty darned good as well. That is for my next cook -up.

Fruit & Chilli Chutney

1 1/2 Tablespoons vegetable oil
2 large brown onions coarsely chopped
2 teaspoons crushed garlic (out of a jar is fine)
2 Tablespoons grated fresh ginger( out of a jar too)
1 teaspoon dried chilli flakes
2 cups firmly packed soft brown sugar
2 limes - finely grate off the zest and put with sugar before squeezing the juice to set aside .
4 X 425 gr cans of fruit slices in light syrup ( Mango, or peaches, or Apricot) drained well and chopped.
1/2 cup malt vinegar.

Heat oil in a large saucepan over moderate heat. Add onion, garlic and ginger and cook stirring for 2 -3 minutes or until onion is soft.
Stir in the chilli, sugar and the lime zest. Add vinegar, and fruit.
Bring to the boil, stirring to dissolve sugar. Reduce heat, simmer stirring & mashing occasionally for 50 - 55 minutes or until mixture thickens and goes a bit syrupy. Lastly stir in the lime juice and remove from heat.

Ladle the chutney into sterilised jars and seal immediately ( makes approx 5 x 170 ml jars)
Keep in a cool dark place for a couple of weeks before opening , and once opened store in the fridge and in 6 weeks.
