Masterchef Australia Scones. 2 Years, 3 Months ago
|

|
I wrote this recipe down as they made these scones, because my scones are always hit and miss. These looked delicious on Masterchef Australia Cooking Class last night.
DATE AND LEMON SCONES.
150 mls milk
150 mls cream
Into this whisk 1 egg
in another bowl mix 3 cups SR Flour. They didn't even sieve it.
2 Tablespoons sugar
1 cup chopped Dates
Zest of 1 lemon
Mix the wet ingredients into the flour mix, mix quickly, turn out onto a floured board and knead quickly and lightly
roll to 2 inches thick and cut out
Mix spoonful of sugar and a little milk to make a glaze.
Glaze and bake at 200 degrees C. 10 - 15 minutes.
Serve with jam and cream

Well, that is a lot less effort than rubbing butter into flour with finger tips ! I love nice easy , peasy recipes and I love Date scones, and I also love anything lemony, so I am going to have a whack at these Faye. I will not tempt the fate of haviong a walking heart attack though, and will desist from putting the jam and cream topping on them to serve. Oooh... but it 'ud be luverly tho woodnit be ! I have made scones successfully with lemonade, and with cream in them before, but I have never ever put an egg in a scone yet. There is a first time for everything they say !. I missed Master Chef last night, I was probably too busy out in the kitchen making Apricot Chutney. When I came in from work today, I could smell the pungent spicy smell of still lingering in my house as soon as I opened the door. Some would find it revolting no dougt, but it just made me head straight for the pantry for some crackers, and cheese, and I spooned a small dollop of chutney onto a few, and .. oh yes... yum, yum... I know I shouldn't do these things, but what the heck... a taste of some goodies now and then is what we all need to make life worth living..

I made these scones this morning and they are very easy and quite delicious. DH and son vouch for them. Can't see that 150 mls of cream in 9 scones and doing without the butter can be heart attack territory either. Better than sweet biscuits and/or pastry.

It did seem a bit of a cheat putting an egg into scones but hey if it works...! Also, the dopey chef said that if you used plain flour to add about 1 1/2 teaspoons of baking powder to it. A cup of plain flour needs at least 1 teaspoon. I thought the entire thing was silly - these guys are facing off with professionals and winning, and the judges are teaching them how to make scones like a first form cooking class??? Still, at least we got a recipe out of it!

I get a peed off at that show, ...that I just can't follow the format.
Seems to me that no matter how many bake offs & *eliminations* they have every night, ...there's STILL contestants in the race!
When does it ever end.
I only watch half of it anyway, as I change to another chanel half way through.
I keep looking ahead in the TV Guide, & it goes on weekly, ....regardless.
How long now,??? a few months?
I don't really mind the judges teaching them how to bake,...even humble scones.
Many a chef can only produce plates full of over decorated foods with dozens of flavour in them,....ask for a plain dish, ....& they can't do it!!!!

I don't ususally watch this show either. In fact strange as it may seem, though I am into cooking, I am not really into cooking shows. The only ones that I can say I have watched and enjoyed, are the ones that take you out around the country sourcing their supplies, and visiting the local markets etc. Rick Stein for instance. Yep... I really dig Rick Stein ! His shows were more than just cooking . Getting back to Masterchef, I have only seen "bits" of it from time to time thats all. I am usually busy in my own kitchen getting my own meal when that comes on , and I heard that they are in the throes of producing a NZ Masterchef show. Can't say I feel the slightest bit excited about that prospect either as I guess it will follow the confusing and prolongued format and like you Lucky, I can't be bothered with it. Maybe it is because I am too hungry myself at that stage !

NZ Masterchef is underway. One of the troops from work was in the initial round which was filmed 2-3 weeks ago. A suggestion for a healthier version of these scones instead of all that cream is to use the equivalent amount of lite evaporated milk instead. I use this in all recipes that call for cream except whipped cream of course!
