Over ripe Bananas 1 Year, 3 Months ago

While I had the family staying here, I over bought on bananas thinking they would eat more of them than they did, and in the very hot weather we have been having, they ripened faster than I could eat them also. I put them into the freezer to be used later for making cakes, and muffins because I hate waste I guess that most of you would know that over ripe muffins can be frozen whole and used in this way. ?
Well, recently I found in a magazine a recipe for a dessert you can use over ripe banana in as well. Very easy-- very quick , thought I would share -
Minted Banana Mousse
serves 4 takes 10 minutes, PLUS chilling time.
3 very ripe frozen bananas
1 Tablespoon lemon juice
1/4 cup honey lightly warmed in microwave
1/4 cup milk
2 Tablespoons finely chopped fresh mint
3 teaspoons gelatine dissolved in a little hot water.
1 cup of thickened cream lightly whipped.
Slice froz bananas and remove skin and put flesh into a blender with the lemon juice honey and the milk and process until smooth.
Turn off the machine and add pre - chopped mint and gelatine . Turn on machine and pulse it a couple of times just to mix.
Turn off again and then gently fold in the whipped cream.
Spoon into 4 parfait glasses, and chill until serving time.
When ready to serve, top with a little more whipped cream, slices of fresh banana, and decorate with grated chocolate and a sprig of mint.
Anyone else made anything new , nice, easy, ecconomical latey. Doesn't have to be B' Nana's!

Wish I knew that when I had my 'Dead Bananas' the birds would not even eat that time....sounds quite exotic if one has all the ingreds in the pantry! Thank you KKKaty XX

I like that recipe. I might just give it a try.
Dan and I were in the grocery store not long ago. He was buying bananas. He loves them. A woman standing nearby said, "Did you know that if you separate the bananas, they will last longer and not ripen so fast?" She said she was a school teacher and they served the kids bananas all the time, and she always uses this trick so the bananas will last longer.
Ever since then, Dan separates the bananas and says she was right.

Separate, store in fridge, not freezer, as the skins go black, but banana inside still white.

Perhaps I should clarify that I am only recommending that already over-ripe bananas be held over in the freezer, until you have time to bake a cake, or make a dessert such as the one above. I do not recommend storing "ready to eat fresh " bananas in the freezer . Chilling them halts the ripening process for sure, but they do not taste so good. Once they have past their use by date in the fruit bowl, it is OK to freeze them them, because they have already fully ripened and full flavour will be able to be enjoyed in your baking.

I freeze them for smoothies in summer.

I heard of someone freezing those small bananas to give to babies with teething discomfort too , the other day. I guess they would not be the over ripe ones though. Possibly a good tip for someone who has a teething child in their family.
