Fried or addled Lucky ? Bit of both I'd say.
Thinking about easy chicken recipes though, the other afternoon my daughter phoned ti pick my brains for a quick recipe that she could throw in the oven and not worry about while she took her sons to soccer practice at 4 pm . She had some chicken thighs with drum sticks attached and had been intending to just crumb and then roast them while she was there to watch they did not dry out. However hubby had suddenly been called in to work and couldn't do the soccer run and she had to go instead.
I told her to put the chicken in an oven bag, mix a packet of onion soup and mushroom soup together - good old Maggi, and put in bag and shake around to coat chicken and then to add a cup of ginger ale and let in the roasting dish in a low oven. What could be easier, and it would be cooked by the time she got home again and the oven bag method would stop it from drying out . Well, she cast that idea aside, saying she didn't have any ginger ale, so I said well put in something else then . Anything to create moisture and slowly steam through the poultry. Suggested a can of crushed pineapple instead, with a little extra water . " Ewee... won't that be too sweet ?" Nah.. the boys will love it said I, you used to when I used to dish it up to you kids.
Isn't funny how sometimes old, and all but forgotten recipes can suddenly pop back into your head. Actually, I think I may even have on the spur of the moment actually combined two different recipes in my mind, but it didn't matter, because she said it was a hit with them all. When she got home she quickly did some of that quick rice, and steamed a few frozen veggies to go with it and by the time they were showered and changed the meal was ready to go on the table. It turned out to be a hit, they have ordered it again

I still love the oldie but goodie Apricot chicken KKKaty!!

Will make it with canned apricots or canned peaches, ...which are much softer,...now we can't buy apricot nectar any more!

In fact tonight, I cooked 8 drumsticks, with chopped onions, & sliced carrots, in a can of Butter chicken, & a packet of Maggi butter chicken.

Only needed some peas & potato mashed for a hearty meal!

Half for tonight, the other half into the freezer, for another night,..when DH is too tired to cook.

Sense of satisfaction, of not only being prepared for emergency,... but of feeling like a good wife, being at the kitchen bench,...making meals.
