I bet Best Mayo would be pleased to see how popular their product is , and of course Highlander Milk is one we all remember well, and in most Kiwi and Aussie refrigerators there would be a container of that always on hand. It keeps almost indefinitely if you don't eat it very often. The vinegar is a natural preservative of course.
Now, here is something you can try. Not my own idea, I saw it on telly, but I tried it the other night, and I liked it.
Take a fillet of firm white fish, and use a spatula to spread it with a coating of mayo. Dunk it in breadcrumbs or panko, dot with a little butter or spray with a little oil, and place on shallow tray and grill until cooked and crumbs browned. Only takes a few minutes. You just have time to tip your salad greens onto a serving plate, and slice up a tomato, and a bit of avo.
