Fry chopped onions and garlic, then chop in large can of corned beef (packed in water not fat) and stir to heat through.

Chop in spare vegies, carrots, beans, peas, corn (whatever you have) and stir fry till warmed. Then toss in chopped tomatoes if you have any or chop in a large tin of canned tomatoes and cook until warmed. Chop a bunch of silverbeet and stir in to heat through. Pour in some water and heat until vegies cooked.

Serve in bowls with steaming rice & crusty bread. (I enjoy mine with cooked green bananas and kumera instead)

If you prefer you could substitute a large can of coconut milk for the tomatoes. Both types are delicious and best of all, will feed a hot meal to hungry crew in a short time.

It is so cold and miserable here in Auckland today.. I have been trying all day to keep warm. Thoughts kept turning to food thinking food all day... comfort food... in the oven is my version of a Lancashire Hot Pot, and it smells so good! I have my fire on in the lounge and I hate to be away from it and in the kithen so have opted for something quick and satisfying for dinner. It only takes a few minutes to prepare veggies and layer them with the meat in the casserole, before cooking slowly in the oven. Apart from the casserole dish , I will have only a knife and fork to wash because It has all been cooked in the casserole, and will be eaten from the casserole.. It is definitely a one pot meal. Is that lazy or plain sensible?
I find it is one of the perks of living alone actually... I can do as I darn well pleasy, and I do!
I wonder how our Rotorua ladies are faring. I can only think of Libratrue just now, but there could be more.. Hope your power is soon on again down there LT... it is pretty cold place Rotorua, when there is snow in the central North Is. So sorry for all of those families in the South Is who are still without power after several days now without it.

I had some friends for lunch to the other day, Scots who used to live in New Zealand 30 0dd years ago. It was a quick meal as we were going out so I just gave them tomato soup, bread and an apple crumble. Lots of praise for the soup and I was asked what brand it was. "I made it," I said. "Did you make the crumble too? Surely not the bread?" I had. Margie squealed, "Oh my God! I'd forgotten how domesticated New Zealanders are." She told me that she never cooks anything, only defrosts, opens cans and heats through.
I'm glad we still know how to make things from scratch, there's such a sense of accomplishment.

my favourite meal. Pork strips, mashed potatpes, asparagus. Just to bump things up here, you understand.

Tonight? a quick tea of recooked potatoes, chicken, pork strips, & leftover veges, with added seasoning to shoosh up the taste.

Hubby does all the cooking here, so I eat what he puts down to me.

I have masses of making new skirts, shortening hems, replacing lose elastics, repairs, etc, I just chuck them on my industrial, then walk out & forget them.

I MUST get motivated soon,...preferably before Xmas, & before one of my lovely sons, comes home for Xmas!
