Sorry JJ I did not see your call for Feijoa muffin recipe in time . Just spotted it now a week later. Basically you can use any good Apple Muffin recipe and just substitute the apple with finely chopped up Feijoa. Just give 3-4 of them ( depending on the size of course) a whirl in the kitchen wizz processor and mix with the wet mix of your muffin recipe. Best way to do muffins is to have all your wet mix ingredients in one bowl, and add the sifted pre mixed dry ingredients and quickly and lightly combine the wet and dry and quickly put into pans. By the way, those silicone muffin pans that you see around now are great. T Just have to remember to set the trays up onto the oven tray so it is easier to put them into the oven once they are filled with mixture. Leave for about 6-7 minutes after removing from oven, and then shake them out onto a rack. Easy as... they all topple out cleanly Something I used to sometimes have a problem with. in the old metal tins.
AND you can fold the baking moulds up, roll them up or stuff them into a drawer. They take up a lot less space if you are short of it, AND they do not make a clattering racket if they fall out if your cupboards are over full and untidy like mine . Only thing is, there seems to be a wide variation of prices for these, so you need to shop around a bit before purchasing any. I believe Woolworths had a good special on them recently - 3 pieces muffin, loaf, and cake moulds all for $19.95. Hard to beat... TWH is also fairly reasonable too. Oh yes, I like them a lot.

Does anyone have a recipe for a Pumpkin Fruit Cake. I had one but have lost it. It had a cup of mashed pumpkin in it and mixed fruit. It was lovely and moist. Lulu

I just Googled Pumpkin Fruitcake and there are quite a few recipes to be found. I am sure you will find the one that you want.

Lula I do have one, but I think it may not be the same as the one you seek. Mine is called Grapefruit and Pumpkin Cake. It does have a cup of mashed cooked pumpkin in it, but has a cup of sultanas, not the mixed fruit that yours had. Mind you, you could certainly substitute , and use mixed fruit I am sure. I t also has almond essence . If it sounds familiar, I can dig it out for you. Just let me know

KKK Katy, I would be grateful if you could give me your recipe for the pumpkin cake. I have all my recipes cut out, pasted onto paper and in plastic sleeves. The one with 2 favourite recipes has done a vanishing trick :cry:
