The other day I bought a piece of boiling bacon. Hadn't had that for an age. To cook, I covered it with water in a saucepan, studded a large peeled onion with cloves , tossed it in as well , and a bay leaf to. It was just under 1500 gms in weight. I brought it to the boil then kept it simmering for 30 mins. per 500 gr. Added carrot and potato for last half hour, and then put some cabbage on top in steamer for final 15 mins.. Served with a mustard sauce made using some of the cooking liquid as per recipe in the Edmonds book, and it was an old fashioned , tasty and ecconomical meal. The leftover meat was delicious over the next couple of days - much nicer than ham to take to work for lunch, in lovely grainy bread, between some lettuce, and the mustard sauce . There is a wee bit left, so today that is going to be chopped up and made into Celery , Ham and rice Soup. And that will be that. Can''t say I didn't get my money's worth from that piece of meat.
