We have at last had a few fine warm sunny days . What a difference it makes to how we all feel, and that coupled with the daylight saving hours again, you feel as though you have some quality time over at the end of the day to just sit and relax and enjoy.
I had a girlfriend here for the weekend and I cooked a couple of pork chops on the Grill and served them with Hassle back Taties and a pineapple salsa. We sat out on the deck and knocked off a bottle of wine between us while have a good old natter about our families, grandkids etc. It was so nice after the interminably long wet and chilly winter .
If anyone is interested, I had marinated the two chops first in -
2T lime juice
2T dark rum
1 T brown sugar
2 cloves of garlic chopped
1/2 tsp each of cinnamon and salt
2 t of chopped fresh coriander leaf.
Mix together and put in shallow dish with chops for a couple of hours, turning the chops frequently during that time.
While that is marinating prepare the salsa -
1/2 red capsicum de=seeded and diced
Fresh Pineapple, peeled and diced. ( about 1/4 of the pineapple.)
1/2 sml red onion diced
1/2 teaspn minced red chilli
2 T chopped coriander leaf
1 T lime Juice
1/2 tspn salt.
Dice it all and refrigerate until required.
Grill chops on both sides until cooked and serve with Salsa, and Baked Potato.
Right , even if you were not interested, I have at least changed the leading topic as the previous one had been there long enough and was getting a bit stale.... It wasn't the shoe or T shirt lady, but I bumped it anyway!
