This is for you Suse. Although I have not done this particular cake in the processor yet, it is still an easy cake , and you wanted a good coffee Cake recipe.

Cappuccino Cake

250 gr softened butter
250 gr soft brown sugar + an extra 2 or 3 Tablespoons in a seperate wee dish
300 gr self raising flour.
4 eggs well beaten eggs.
50 gr walnuts, toasted and finely chopped.
( toasting brings out the flavour more Sue, and you can use the food processor for chopping them )
200 ml of very strong black coffee ( Do this first, because you need to leave to cool . you can make with instant. )
Method

Make the coffee and set aside to cool.

Heat oven to 180 C and grease and line two 20 cm sponge sandwich tins.
Beat butter and main measure of sugar together with electric beatrers until pale and creamy.
Add the sifted flour and pre beaten eggs in one go, and keep beating until evenly mixed
Fold in the walnuts, and 100 mls ( HALF only ) of the cold coffee.
Spoon mixture evely into the two prepared tims and bake for approx 30 minutes or until golden and well risen.
Remove from oven but leave the cakes in their tins for 5 minutes before turning onto a wire rack.
Sweeten the remaining coffee with the extra 2-3 Tablespoons of brown sugar amd sprinkle 2 tablespoons of the liquid carefully and evenly over both of the sponges. . Leave to cool completely and while doing so, make the filling and frosting.

Frosting

500 gr tub Marscarpone
2 T light soft brown sugar
remainder of the sweetened coffee
Cocoa powder to decorate.

Beat the first 3 ingredients together until smooth and creamy.
When cakes are completely cold, use about half of the frosting to sandwich the sponges together, then spread the rest of the frosting over the top of the cake using a swirling motion. Decorate with a dusting of cocoa powder through a fine sieve, to look like a cup of cappuccino.


Tis not a cheap cake to make Suse, but it is a lovely one for those of you who are Coffeeaholics. DH's favourite this was, once I got it right ! The first time I tried to make it was a total disaster because I did not read the recipe carefully enough and poured in ALL of the cold coffee at once. Bugger ! That is why I emphasised that part !.
