Jode, I know you asked somewhere for ideas for Vegetarian food for your other half, but do you think I can find the thread, that it was on ? No, not a show so I hope this catches your eye. I don't know about for Christmas dinner, but these Curry Pasties are a vegan recipe, and very tasty.
Curry Pasties ( makes 4)
225 g plain wholemeal flour.
100 g margarine cut into small pieces
4 tablesp water from the fridge,
2 tablesp vegetable oil
225 g diced root vegetables ( potatoes carrots, and parsnips , kumara)
1 sm onion finely chopped
2 garlic cloves finely chopped
1/2 teaspn each of, curry powder, ground turmeric, ground cumin & whole grain mustard.
5 tablespns vegetable stock,
soya milk to glaze.
Dough for cases.
1/ Using finger tips, rub marg. into flour until mixture resembles breadcrumbs. Stir in the water and bring together to rorm a soft dough. Wrap and set aside to chill in refrigerater for 30 minutes.
2/ Filling.
heat oil in large saucepan. Add the diced vegetables, chopped onion and garlic and fry, for 2 mins. stirring occasionally. Scatter in the spices, turning the vege. to coar them thoroughly. Fry for a further minute, stirring constantly.
3/ Add the stock to the pan and bring to the boil, cover and simmer, stirring occasionally for about 20 mins until the vege are tender and the liquid has been absorbed. Leave to cool.
4/ Divide the pastry into four portions Roll each portion into a 15 cm round. Place the filling on one half of each round.
5/ Brush the edges of each round with soya milk , then fold over and press the edges together to seal.
Place on a baking tray and bake in a pre-heated oven, 200c for 25-30 minutes until golden brown.
