This recipe was sent in to us from a member who ilives in The States, some of these ingredients may not be available herre in New Zealand but if you find a substitute, please let us know.

 

 

 

 

Ingredients

• 10 New Zealand lamb shanks

• 2qts beef or veal stock

• 1qt sweet soy sauce

• 6oz caramel spice, ground

• 1 head garlic, chopped

• 2 carrots

• 3 stalks celery

• 2 onions

• 2 bay leaves

• 4oz oil

 

Method

Combine all ingredients and cover lamb shanks and marinade 24 hours.

Remove from liquid and brown shanks.

Place in braiser and cover with 1/3 marinade.

Cover and place in 350°F oven.

Braise until tender, about 2-3 hours.

Glaze meat with braising juice every 20 minutes until done.

Remove, strain liquid, skim fat and reduce by 1/3.
