1.5kg chicken pieces
- 3 rashers of bacon, diced finely
- Half a cup sliced spring onions
- 4 small onions cut into quarters
- 250gms whole mushrooms
- 1 crushed glove of garlic
- 1 tsp salt
- Half a tsp pepper
- Half a tsp dried thyme
- 8 small potatoes, scrubbed and halved
- 250mls red wine
- 250mls chicken stock
- Chopped parsley to garnish
Method
Saute bacon, and spring onions.
Drain and pat dry on a paper towel to remove excess fat.
Brown chicken pieces and place in a large saucepan.
Place the remaining ingredients in the saucepan and allow to simmer for 3-4 hours or until chicken is extremely tender.
Garnish with parsley to serve.
